Baked Sausage
with Peppers, Potatoes & Onions

  • Kielbasa Sausage, chopped
  • green bell peppers, chopped
  • onions, chopped
  • potatoes, chopped
  • 1 jar of mild pickled Banana Pepper rings
  • rosemary
  • Cajun seasoning
  • a pinch of salt
  • a pinch of pepper


  • Mix up ingredients with a little vegetable oil.

    Wrap in heavy duty foil.

    Cook over campfire coals for about 20-30 minutes.

    Enjoy.

    That sounds very tasty! Thank you for sharing this recipe. I am guessing that the banana peppers and the Cajun seasoning give an interesting and delicious flavor.

    The nice thing about using a precooked sausage like Kielbasa is that you don't have to wonder if it has cooked thoroughly! Precooked sausages are ideal both for foil dinners and for Dutch oven cooking. You can even roast them over the fire on a marshmallow roasting stick, or grill them over the coals of a campfire. They make good hiking or picnicking food, too, sliced and eaten cold. My family likes ham sausage and pepperoni, too.
