This salad is vegetarian and can be vegan if you leave out the halloumi.
Rinse and drain the black beans.
Mix the beans, corn, tomatoes, pepper, onion, cilantro, olive oil, lime juice, jalapeño, cumin and a dash of salt in a large bowl.
Stir well.
Slice the halloumi and sear it gently in a skillet till lightly brown. Keep tossing it!
Add the avocado and the halloumi to the salad bowl. We stir the avocado gently in and lay the halloumi on the top.
We will add a photo next time we make this salad!
You could serve the salad with a fresh green salad.
Another option is to serve with nachos or use it as a taco filling.

Simply cut a few cherry tomatoes in half and plant them seed side up in a tub of earth. Press about half an inch down. Water regularly.
We ended up with 3 really good tomato plants that grew huge and have given us really sweet, tasty tomatoes for the past few months. They are still producing fruit and taste way better than the supermarket cherry tomatoes - give it a go!!
