Pies cooked in the fire

by Kelli
(Franklin, Indiana USA)

Get an iron pie cooker. (Outdoor stores sell them.)

Butter two slices of bread and put them, butter side out, in the cookers.

Add pie filling. (Our favorites are blueberry and cherry.)

Add a large marshmallow.

Sprinkle a spoon of sugar over the pie filling.

Close up the cooker and stick it into hot coals.

It takes a few minutes and you get yummy goodness!!!!

Thank you, Kelli! That sounds delicious! I have wanted to try pie iron cooking for quite a while now. Your description of the marshmallow-cherry yummy goodness might be what finally gets me to give it a try.

Here are some other tasty-sounding pie iron recipes I'd like to try:

Tuna Melts

Mix canned tuna fish with mayonnaise.
Add minced onion, dill pickle or green onion.
Butter two slices of bread.
Place one slice of bread (buttered side down) in the pie iron.
Spread with the tuna mixture.
Add a slice of cheese (Cheddar, Swiss or Havarti).
Add a slice of tomato.
Cover with the second slice of bread (buttered side up) and grill over the coals until the cheese has melted.

Cornbread

Purchase a cornbread mix - or use your own recipe to make cornbread batter.
Grease the pie iron with oil or butter.
Fill the iron about one-third full with batter.
Close the pie iron and hold it over warm coals until the cornbread is done.
(Don’t cook this over really hot coals.)

Garlic Bread

Press a couple of garlic cloves into some soft butter. Mix well.
Spread the two halves of a hamburger bun with the garlic butter.
Put the bun into the cooker, buttered sides facing out.
Grill until golden brown.

Rocky Road Dessert

Butter two slices of bread and put them in the cooker, buttered side out.
Spread the other side of the bread (one piece or both - your choice) with peanut butter.
Put a square of chocolate and a marshmallow between the bread slices and close the cooker.
Toast until the bread is golden brown.

Okay, just typing this is making my mouth water! I am going to go dig out the pie iron that my mother-in-law gave us last year, and try these ideas on our very next camping trip.

Thanks for the inspiration, Kelly!
